This week we check in to see how quarantine life is going with each other. We talk about some of the weird things we've done and what's saving us right now. We'd love to hear from you guys! Some Good News

Rebecca C's Tzatziki Recipe:

1  7”-9” cucumber, cut in half lengthwise
1 1/2 cups Greek yogurt (NOT fat free)
2 cloves garlic, minced
1 1/2 T white vinegar
Chopped mint and dill, to taste

Remove seeds from cucumber and grate on a box grater. Place on a clean, absorbent kitchen towel and sprinkle liberally with salt. Let sit for a few minutes, then squeeze out as much liquid as possible.
Place minced garlic into vinegar, letting sit for 10 minutes or so.
In a bowl, combine drained cucumbers and Greek yogurt. Strain vinegar into the mixture, discarding the garlic solids. Mix together with herbs, if desired. Let sit in fridge for an hour to let flavors meld, then add salt and additional vinegar as needed.

Serve with pita chips, crudités, grilled meats and vegetables, on top of rice... possibilities are endless!
